Swiss Chard Rolls With Root Vegetables

Serves 2
4 large Swiss chard leaves, thoroughly washed
1 1/2 tablespoons extra-virgin olive oil, divided
1 cup roughly chopped red onion
1 medium carrot, peeled and roughly chopped
1 medium sweet potato (about 1/4 pound), peeled and finely diced
4 cups diced root vegetables (such as celery root, parsnips, turnips, and white potatoes)
2 tablespoons roughly chopped fresh Italian parsley
Juice of 1 medium lime (about 2 tablespoons)
1 teaspoon chopped fresh cilantro
1/4 teaspoon kosher salt, plus more for water
1/8 teaspoon freshly ground black pepper
1/2 cup vegetable stock

  1. Remove the stems from the chard; chop them finely.
  2. Heat 1 tablespoon olive oil over medium heat in a heavy-bottomed Dutch oven or large skillet. Add the chard stems, red onion, carrots, sweet potatoes, root vegetables, parsley, lime juice, cilantro, salt, and pepper. Cook, stirring occasionally, until the root vegetables are fork-tender, about 5–8 minutes.
  3. Meanwhile, bring a large pot of salted water to a boil. Blanch the chard leaves 3–4 minutes, then drain and cool.
  4. Spoon 1/4 cup of filling onto the stem end of a chard leaf. Fold in the sides to envelop the filling; roll away from yourself, keeping even tension so the rolls remain plump.
  5. Use the remaining olive oil to grease a medium skillet. Line up the rolls in the skillet; add stock. Cook 10 minutes over medium heat; serve garnished with remaining filling.
